Bite Sized Baking

Baking is good. Cheesecakes are good. Bite sized foods are good.

Precisely why Oreo Cheesecake Bites are GOOD.

We had an impromptu BBQ on Sunday, which was a great excuse to try a new recipe and put my Pinterest addiction to good use. So I accepted the Oreo Cheesecake Bites recipe challenge. These cheesecake bites are an easy and delicious dessert that took a lot of stress out of making something for my close friends who I like to impress with my baking skills.

Get cookin’ by preheating your oven to 350 F. Place cupcake liners in a muffin pan and place oreos at the bottom of each one and set aside. Beat 16 oz cream cheese in a bowl until creamy. Gradually beat in 1/2 cup sugar and 1/2 teaspoon vanilla. Beat two eggs lightly, then pour them in the bowl, a little at a time, while mixing. Beat in 1/2 cup sour cream and a pinch of salt. Stir in 10 coarsely chopped Oreos in by hand.

Pour the batter into the prepared tins, I find this is easiest with an ice cream scoop, filling each almost to the top. Bake until filling is set, about 22-25 minutes. I left mine for 23 minutes and they came out perfectly but this always depends on your oven. Keep an eye on them! Cool in the pans for about 15 minutes, then put them on a plate or pan and let them cool in the fridge for about 4 hours. Serve with a healthy spoonful of cool whip and enjoy!

So what have we learned? Bite sized anything is good.

Plus you don’t feel bad when you have seconds. Or thirds.
